Swedish Coffee Cake / Grandma Regehr's Apricot Platz Recipe
Batter:
1 cup flour
3 tsp baking powder
1/2 cup sugar
3 Tbsp melted butter
1/2 cup milk
1 well beaten egg
1tsp vanilla
Topping: (crumbs)
1/2 cup soft butter
1 cup sugar
1 cup flour
Mix flour, sugar and baking powder.
Add melted butter, milk, egg and vanilla.
Pour into 9 X 12 pan.
Cover with apricots or plums (peel side down).
Mix topping to make crumbs.
Sprinkle on fruit and bake at 375 degrees for 30 mins. or until brown and bubbly.
